  1. The sauerkraut wash and drain through a sieve.
  2. Heat the oil or lard in a saucepan and roast the diced onion until golden.
  3. Then add the sauerkraut and pour on the soup. Add all the spices (juniper berries, bay leaves, caraway seeds, salt and pepper) as well as a pinch of sugar, put the lid on the pot and let it simmer for about 20-25 minutes, stirring frequently.
  4. Before serving, season the cabbage with salt again and serve as an accompaniment to roast pork with dumplings.

The sauerkraut can be kept airtight and well sealed for 5-6 weeks. However, if it smells very sour or if there are dark spots in the sauerkraut, it is no longer edible and must be disposed of.

You can also freeze the vacuum-packed sauerkraut, then cut the bag open, put it in a saucepan and let it thaw slowly.

Sauerkraut goes wonderfully with grandma's roast pork.
